  • 1 lb boneless, skinless chicken breasts
  • 4 cloves garlic
  • 1/2 cup chicken broth
  • Juice of 1 lemon

  • 1 cup long-grain white rice
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Season chicken strips with salt and pepper.

  3. In the same skillet, cook minced garlic for 1 minute. Add chicken broth, lemon juice, and white wine (if using). Simmer for 3–4 minutes.
  4. Stir in butter until melted, then return the chicken to the skillet and coat with the sauce.
  5. In a medium saucepan, combine rice, chicken broth, and minced garlic; bring to a boil. Cover and simmer for 15–20 minutes until rice is tender.
  6. Stir in Parmesan cheese into the rice and season to taste.
  7. Serve garlic parmesan rice on plates, topped with chicken scampi and sauce.
